Open in Pepper →Some food is meant to be eaten off a paper plate, standing up, while everybody talks over each other. A warm bowl of queso and a bag of chips pulls people into the kitchen faster than anything you can plate up nice.
Cooks on Pepper reach for this collection on game days, birthday parties, and those Friday nights when nobody wants a real dinner but everybody's hungry by seven.
Every recipe here is built for snacking: Smoked Queso and a stovetop white American cheese Queso, Air Fryer Taquitos and Ground Beef Taquitos, Game Day Nachos and Loaded Nachos, plus Fire-Roasted Salsa, corn and black bean salsa, guacamole, and a sweet Fruit Salsa with strawberries, kiwi, and Granny Smith apple.
Shred your own cheese
Bagged shreds are coated to keep from clumping, which makes queso grainy. Grate a block of white American or Monterey Jack and melt it with a splash of milk over low heat.
Layer nachos in two rounds
Spread half the chips, meat, and cheese, then repeat. Bake at 400°F for 8 to 10 minutes so every chip gets covered instead of just the top ones.
Roll taquitos tight
Warm corn tortillas 20 seconds in the microwave under a damp towel so they bend without cracking, then roll snug and set them seam-side down in the air fryer.
Salt salsa then wait
Stir in the salt and lime juice, then let the salsa sit 15 minutes before tasting. The tomatoes and onion give up juice and the flavor changes a lot.
