Peel lemons thin
For homemade limoncello, use a vegetable peeler and take only the yellow zest. Any white pith turns the batch bitter after 2 weeks of steeping.
Make simple syrup ahead
Stir 1 cup sugar into 1 cup hot water until clear, then cool. It keeps in the fridge about 2 weeks and mixes in cold drinks better than dry sugar.
Add bubbles last
Build the spritz with limoncello and ice, then top with 2 to 3 ounces of prosecco right before serving and stir once, gently.
