Cut potatoes small
Halve or quarter mini gold potatoes so no piece is bigger than about 1 inch — they'll finish in the same 25 to 30 minutes as the chicken.
Add asparagus late
Toss asparagus onto the sheet pan for only the last 10 to 12 minutes, or it goes limp and gray before the chicken is done.
Pound the chicken breast
For marsala, flatten breasts to about 1/2 inch before flouring so they cook through in 4 to 5 minutes a side and stay juicy.
Give the pan room
Spread everything in one layer with a little space between pieces — crowding steams the vegetables instead of browning them. Use two pans if you need to.
