Weeknight Italian That Feeds Everybody

Italian cooking at home isn't fussy. It's a pound of sausage, a pot of noodles, and a pan of something bubbling that gets everyone to the table without a fight.

Cooks on Pepper reach for this collection on the nights when the fridge is thin and the kids are hungry at six, or when company is coming and they want one big pan they can set down and let people serve themselves.

Every recipe here is a real dinner: Italian Style Sliders on Hawaiian rolls, Spicy Italian Sausage Rigatoni, Italian Stuffed Peppers, three-meat Italian Meatballs, Italian Drunken Noodles, Italian Wedding Soup, crispy Italian Chicken Cutlets, Italian Sub Squares, and Italian Shells made like homemade hamburger helper.

Quick Tips

  1. 1

    Brown the sausage first

Give the sausage 6 to 8 minutes in a hot pan before adding onions or peppers, and leave the browned bits in for the sauce.

  2. 2

    Salt the pasta water

Use about 1 tablespoon of salt per 4 quarts of water, and pull the noodles a minute early since they finish in the sauce.

  3. 3

Mix meatballs with a light hand

Combine the beef, veal and pork just until it holds together — overworking makes meatballs tight instead of tender.

  4. 4

    Rest sliders before cutting

Let baked sliders or sub squares sit 5 minutes out of the oven so the cheese sets and they cut clean.
