Toast the roll first
Split the rolls, brush with a little oil or butter, and run them under the broiler 1 to 2 minutes. It keeps the bread from going soggy under the sauce.
Sear the steak hot
Cook shaved steak in a screaming-hot skillet in two batches, about 2 to 3 minutes each, so it browns instead of steaming.
Melt the cheese on top
Lay the cheese over the meat in the pan, cover for 60 seconds, then scoop the whole thing straight into the roll.

For homemade hoagie rolls, use warm water around 105°F and let the yeast sit 5 to 10 minutes until it's foamy before mixing.
