A Good Roll Makes The Sandwich

A hoagie is dinner you can hand somebody on a paper towel and still feel good about. Warm meat, melted cheese, a roll that holds up to all of it — that's the whole job.

Cooks on Pepper reach for these on the nights nobody wants a plate: after ball practice, during the game, or when there's leftover steak and a package of rolls on the counter.

Every recipe here is a real sandwich supper, from meatball hoagies with marinara and Italian cheese to The Italian Hoagie with oil and red wine vinegar, shaved steak hoagies with onions, Spicy Parmesan shaved steak hoagies with mushrooms, Philly cheesesteak stuffed peppers and hoagies, a simple turkey and cheese hoagie, and homemade hoagie rolls if you want to start from scratch.

Quick Tips

  1. 1

    Toast the roll first

Split the rolls, brush with a little oil or butter, and run them under the broiler 1 to 2 minutes. It keeps the bread from going soggy under the sauce.

  2. 2

    Sear the steak hot

Cook shaved steak in a screaming-hot skillet in two batches, about 2 to 3 minutes each, so it browns instead of steaming.

  3. 3

    Melt the cheese on top

Lay the cheese over the meat in the pan, cover for 60 seconds, then scoop the whole thing straight into the roll.

  4. 4

    Proof yeast at 105°F

For homemade hoagie rolls, use warm water around 105°F and let the yeast sit 5 to 10 minutes until it's foamy before mixing.
