Crockpot Chicken Gnocchi Soup

Creamy, savory, & absolutely delicious chicken gnocchi soup made via crockpot

Ingredients

  • 1 lb Chicken Breast; filleted
  • 2 drizzles Extra Virgin Olive Oil
  • to taste Salt
  • to taste Onion Powder
  • to taste Black Pepper
  • to taste Garlic Powder
  • to taste Italian Seasoning
  • 1/4 stick Butter
  • 1 cup Carrot; shredded
  • 2 stalks Celery; chopped
  • 2 cloves Garlic; minced
  • 1/2 Onion; diced
  • to taste Thyme
  • to taste Rosemary
  • 32 oz Vegetable Broth
  • 1 package Potato Gnocchi
  • 1 cup Spinach; roughly chopped
  • 2 cups Half & Half

Instructions

  1. 1In a large skillet, drizzle and heat extra virgin olive oil over medium-high heat. While oil is heating up season your filleted chicken breast with onion powder, garlic powder, salt, black pepper, and Italian seasoning to preference. When oil is finally heated add your chicken breast and cook until you get a nice golden brown sear on both sides. (Some of the seasoning may stick to pan don't worry) Once chicken is cooked, remove from pan and set aside to rest and cool a bit. (Don't turn heat off skillet)
  2. 2In the same skillet, heat another drizzle of extra virgin olive oil and melt your butter over medium-high heat. Once butter is melted and oil is heated add in your prepared carrot, celery, garlic, and onion. Sautée until onion is opaque translucent and other vegetables are fragrant and starting to soften. (The water coming out from the vegetables during the sautée should help deglaze some of the caramelized bits left over from the chicken). Once vegetables are sautéed throw them in the bottom of a crockpot pot.
  3. 3By now, the chicken should have cooled to a manageable temperature so you can either shred the chicken (personal preference) or cube the chicken. Either way, once you are done playing with your chicken 😉 put it in the crockpot and wash your hands ya sicko.
  4. 4Next, add rosemary and thyme to the crockpot. Once you added the thyme and rosemary add in the vegetable broth and give a good stir. Seal the crockpot and set to cook on high for 4 hours to let all those flavors get to know one another.
  5. 5About 2 hours into cooking, add your potato gnocchi to the crockpot and give another good stir.
  6. 6About 3 ½ hours into cooking, roughly chop the spinach and add it to the crockpot then give another good stir. The spinach should start to wilt and cook down. About 10 minutes prior to serving add in the half and half.
