Dry the beans first
Pat green beans completely dry before they hit hot oil so they blister instead of steam. Give them 5 to 7 minutes without stirring much.
Salt cucumbers ahead
Toss sliced cucumbers with a teaspoon of salt and let them sit 20 minutes, then drain so your salad doesn't turn watery.
Add garlic last
Stir thinly sliced garlic in during the final 60 seconds. Any longer over high heat and it turns bitter.
Rinse quinoa before cooking
Rinse 1 cup quinoa under cool water for 30 seconds, then simmer in 2 cups water about 15 minutes until the grains uncurl.
