A Pound Of Ground Beef Goes Far

One pound of ground beef, a little flour, and some broth or milk feeds a whole table. That's why this dish has been on kitchen tables for generations — it stretches, it sticks with you, and everybody eats it without complaining.

Cooks on Pepper reach for these on the nights the fridge looks empty and payday is still a few days out, or when they want something warm over biscuits, mashed potatoes, or rice without a trip to the store.

Every recipe here starts with browned beef and ends in gravy: Hamburgers in hamburger gravy, the simple Hamburger Gravy with onion and salt, School Cafeteria Hamburger Gravy with a splash of Worcestershire, MeeMaw's Hamburger Gravy made with brown gravy mix and beef broth, and Hamburger Gravy with Rice.

Quick Tips

  1. 1

    Brown the beef hard

Let the meat sit undisturbed 3 to 4 minutes before you stir so it gets dark crusty bits. That's where the gravy gets its flavor.

  2. 2

    Leave some of the fat

Drain off most of the grease but keep about 2 tablespoons in the pan to cook your flour in.

  3. 3

    Cook the flour first

Stir 3 tablespoons flour into the beef and fat and cook it a full minute before adding liquid, or the gravy tastes pasty.

  4. 4

    Add liquid slowly

Pour in broth or milk about 1/2 cup at a time, stirring constantly, and simmer 5 minutes until it coats the back of a spoon.
