Open in Pepper →When there are eleven people at the table, you cook differently. You stretch a few pounds of ground beef with beans, pasta and tomatoes, and nobody walks away hungry or knows what it cost you.
Cooks on Pepper pull these out for Sunday dinners, church nights, holiday weekends when the cousins are in town, and any ordinary Tuesday when the house somehow fills up.
Every recipe here feeds a crowd for very little: Chili and Easy Crockpot Chili, Baked Ziti and Crock Pot Baked Ziti, Taco Soup, White Chicken Chili, Crockpot Goulash and Cheesy Beef Goulash, plus Pulled Pork BBQ Stuffed Baked Potatoes and Midwest pulled pork.
Brown the beef first
Even for slow cooker chili or goulash, brown 2 to 3 pounds of ground beef in batches so it sears instead of steams, then drain the fat.
Stretch with beans and pasta
Add two extra cans of kidney or black beans, or another half pound of ziti, to feed three or four more people for about a dollar.
Cook pork low and slow
A 6 to 8 pound pork butt needs 8 to 10 hours on low with a cup of broth before it shreds easily with two forks.
Undercook the ziti
Boil pasta 2 minutes shy of the box time; it finishes in the sauce and won't turn mushy sitting in a warm pan.
