Ingredients

  • 500g Lamb Mince
  • Handful Soft Apricots
  • 1 tsp Cumin
  • 50g or more Breadcrumbs
  • 1 Egg
  • handful Fresh Coriander Leaves
  • 1 Onion
  • 5 tbsp Harissa
  • 3 Garlic clove
  • 1 tin Chopped Tomatoes
  • 1 Tin Chickpeas
  • 2 tbsp Pomegranate Molasses
  • Feta Cheese
  • handful Pine nuts

Instructions

  1. 1To make the meatballs, incorporate the lamb mince, apricots, breadcrumbs, egg, cumin, some coriander leaves, half an onion and half the harissa. Mix all together and start making the meatballs.
  2. 2It’s a good idea to chill the meatballs before you cook them. The heat a pan and cook the meatballs so they’re browned on the outside.
  3. 3To make the sauce, fry off the rest of the onion, garlic and if you like a bit of spice you can add some chilli or chilli flakes in. Add the chopped tomatoes and the rest of the harissa paste, chickpeas and pomegranate molasses. Cook for around 20 minutes on low then add the meatballs and cook until the meatballs are cooked through.
  4. 4Serve piping hot with rice, cous cous or anything you like!
  5. 5Serve with feta, pine nuts and coriander scattered on top…delish!
