Brown the beef hard
Spread the pound of ground beef in a hot skillet and leave it alone 3 to 4 minutes before breaking it up. Those browned bits are most of the flavor.
Drain but keep drippings
Pour off the grease, then leave about a tablespoon in the pan to cook the onion and garlic in.
Add sour cream off heat
Pull the skillet off the burner and stir in the sour cream so it stays smooth instead of curdling. Warm it 1 to 2 minutes only.
Undercook the egg noodles
Boil them 1 minute shy of the package time; they finish softening in the sauce and won't turn mushy.
