Stroganoff Without The Steak Budget

Stroganoff used to mean strips of expensive beef and a long simmer. Ground beef gets you the same creamy, savory sauce over noodles in about the time it takes to boil water, and nobody at the table asks questions.

Cooks on Pepper reach for these on the nights when the fridge is thin and everyone's hungry at once — a pound of ground beef, an onion, a little garlic, and dinner is handled.

Every recipe here starts with browned ground beef. There's the classic Ground Beef Stroganoff, a Crockpot Ground Beef Stroganoff for mornings you can plan ahead, a One-Pot Ground Beef Stroganoff with cornstarch to thicken, Ground Beef Stroganoff Over Egg Noodles with hot sausage mixed in, and a version with caramelized mushrooms and crispy onions on top.

Quick Tips

  1. 1

    Brown the beef hard

Spread the pound of ground beef in a hot skillet and leave it alone 3 to 4 minutes before breaking it up. Those browned bits are most of the flavor.

  2. 2

    Drain but keep drippings

Pour off the grease, then leave about a tablespoon in the pan to cook the onion and garlic in.

  3. 3

    Add sour cream off heat

Pull the skillet off the burner and stir in the sour cream so it stays smooth instead of curdling. Warm it 1 to 2 minutes only.

  4. 4

    Undercook the egg noodles

Boil them 1 minute shy of the package time; they finish softening in the sauce and won't turn mushy.
