Dinner Cooks Faster On The Griddle

A big flat top turns supper into one pass of cooking. Meat, veggies, and tortillas all hit the same hot surface, and you scrape it clean when you're done instead of washing three pans.

Cooks on Pepper pull these out on nights when everybody's hungry at once, when the kitchen is already too warm, or when the kids want tacos again and nobody wants to argue about it.

Every recipe here is made on the griddle: Blackstone tortellini with sausage, jalapeño poppers, chicken tacos, steaks with compound butter, Big Mac tacos, smash tacos, hibachi with chicken thighs and chuck eye steak, a crunchwrap, and hot buttered Cheerios for the sweet tooth.

Quick Tips

  1. 1

    Set two heat zones

Run one side hot for searing and keep the other on low. Meat sears on the hot side, then slides over to finish while tortillas warm.

  2. 2

    Use cold rice for hibachi

Day-old jasmine rice, chilled at least 4 hours, fries up in separate grains instead of turning to mush.

  3. 3

    Press smash tacos hard

Lay the beef right on the tortilla and press flat for about 2 minutes until the edges brown and crisp.

  4. 4

    Rest steaks before cutting

Pull steaks off, add the compound butter, and let them sit 5 to 10 minutes so the juices stay in the meat.
