Ingredients

  • 1 lb, cut into bite-sized pieces chicken breast
  • 1 tbsp, grated fresh ginger
  • Zest of 1 lemon lemon zest
  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • to taste salt & pepper
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • chopped, optional fresh cilantro
  • to taste salt & pepper
  • 1/4 cup mayonnaise
  • 1-2 tsp, adjust for spice sriracha
  • 1 tsp lime juice

Instructions

  1. 1Prepare the Coconut Rice: Rinse jasmine rice, then combine it with coconut milk, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until the rice is tender and infused with coconut flavor.
  2. 2Make the Lemon Ginger Glaze: In a small bowl, mix grated ginger, lemon zest, lemon juice, honey, and soy sauce. Set aside.
  3. 3Cook the Chicken: Heat olive oil in a skillet over medium heat. Season chicken pieces with salt and pepper, then add to the skillet. Sear the chicken for 4-5 minutes until golden and cooked through. Pour the lemon ginger glaze over the chicken and cook for another 2-3 minutes, stirring occasionally, until the glaze thickens and coats the chicken.
  4. 4Prepare the Pineapple Mango Salsa: In a bowl, combine diced pineapple, mango, red onion, lime juice, cilantro, salt, and pepper. Toss gently to mix.
  5. 5Make the Spicy Mayo: In a small bowl, whisk together mayonnaise, sriracha, and lime juice until smooth. Adjust spice level to taste.
  6. 6Assemble the Bowl: Start with a base of coconut rice, add the lemon ginger chicken, and top with pineapple mango salsa. Drizzle with spicy mayo and garnish with fresh cilantro and lime wedges for extra flavor.

Fresh Ginger Makes Chicken Taste Like Dinner

A knob of fresh ginger and a couple of garlic cloves turn plain chicken into something you actually look forward to. It's cheap, it keeps in the fridge for weeks, and it does the work of a whole spice rack.

Cooks on Pepper reach for these when the chicken is thawed but nobody wants the same skillet supper again, or when somebody's stuffy and a bowl of ginger broth sounds right.

Every recipe here leans on that ginger: Lemon Ginger Chicken with Pineapple Mango Salsa, Orange Ginger Chicken in the crockpot, Take-Out Sesame Ginger Chicken, Hawaiian Cold Ginger Chicken, and soups like Tinola and garlic ginger chicken soup.

Quick Tips

  1. 1

    Grate ginger on a rasp

A fine rasp grater turns a 1-inch piece into a pulp that melts into sauce, so you don't bite into a woody chunk.

  2. 2

    Freeze the leftover root

Wrap the unused hand of ginger and freeze it up to 3 months; grate it straight from frozen, no peeling needed.

  3. 3

    Cornstarch the chicken

Toss bite-sized pieces with 2 to 3 tablespoons cornstarch before frying so the sauce clings instead of sliding off.

  4. 4

    Add garlic last

Ginger can go in early, but stir garlic in for the final 30 to 60 seconds so it doesn't scorch and turn bitter.
