Thaw pastry in the fridge
Move frozen puff pastry to the refrigerator for about 4 hours, or leave it on the counter 30 to 40 minutes. Warm dough tears and won't puff.
Cook the fruit down first
Simmer chopped strawberries or apples with sugar and a spoonful of dissolved starch for 5 to 8 minutes so the filling thickens instead of soaking the crust.
Brush with egg wash
Beat one egg with a teaspoon of water and brush the edges before baking for a shiny, deep golden top in the last 10 minutes.
