Easy Puff Pastry "Pie"

Ingredients

  • 1 package (2 sheets) Puff Pastry, thawed
  • 4 oz. Cream cheese
  • 1/4 Cup Jam of choice
  • 1/4 Cup Granulated Sugar
  • 1/2 tsp Vanilla extract
  • 1 Egg
  • 2 Tbsp Demerara sugar

Instructions

  2. 2Slice one sheet of puff pastry into strips approx. 1" wide and set aside (they don't have to be perfect
  3. 3Place the other sheet of puff pastry on a parchment/silpat lined baking sheet
  4. 4Mix together softened cream cheese, granulated sugar, and vanilla. Spread onto the puff pastry, leaving a 1" margin on all sides
  5. 5Swirl the jam of your choice into the cream cheese mixture
  6. 6Beat the egg with 1Tbsp of water to create an egg wash and brush this onto the edge of your puff pastry
  7. 7Begin to layer the strips of puff pastry on top to create a lattice top, or pattern of choice. The egg wash on the base layer will help these stick. Trim off excess pastry strips with a pizza cutter
  8. 8Brush egg wash stop each strip of pastry and sprinkle with the demerara sugar
  9. 9Bake for 15-20 minutes until pastry is golden brown. Enjoy :)
