Freeze the cheese first
Bread the curds or sticks, then freeze them 30 to 60 minutes. Cold cheese stays put instead of leaking out into the oil.
Hold the oil at 375
Fry at 350 to 375 degrees and check with a thermometer. Cooler oil soaks in, hotter oil browns the coating before the cheese melts.
Double dip the coating
Run each piece through egg and crumbs twice for a shell that won't split. Let them sit 10 minutes so the breading sets.
Fry in small batches
Six to eight pieces at a time keeps the oil temperature steady. Give them 60 to 90 seconds, until just golden.
