Hot Cheese Is Worth The Oil

There's no faking a good fried cheese curd. You want a crisp shell that holds up for a second and then gives way to a stretch of melted cheese, and that only happens when the batter is cold and the oil is hot.

Cooks on Pepper reach for this collection when the game's on, when the kids have friends over, or when dinner is just a plate of something hot passed around the counter.

Every recipe here is cheese and hot oil: Fried Cheese Curds in a beer batter and another dredged in buttermilk, Homemade Mozzarella Sticks, deep fried cheese croquettes with pimento and cheddar, Crab Rangoon Mozzarella Sticks, and Fried Cheese Stuffed Doritos.

Quick Tips

  1. 1

    Freeze the cheese first

Bread the curds or sticks, then freeze them 30 to 60 minutes. Cold cheese stays put instead of leaking out into the oil.

  2. 2

    Hold the oil at 375

Fry at 350 to 375 degrees and check with a thermometer. Cooler oil soaks in, hotter oil browns the coating before the cheese melts.

  3. 3

    Double dip the coating

Run each piece through egg and crumbs twice for a shell that won't split. Let them sit 10 minutes so the breading sets.

  4. 4

    Fry in small batches

Six to eight pieces at a time keeps the oil temperature steady. Give them 60 to 90 seconds, until just golden.
