Open in Pepper →Squid is one of those things people order out and never make at home, and that's a shame. It cooks in about two minutes over high heat, it takes to garlic and tomato and black pepper, and a pound of it feeds a table.
Cooks on Pepper reach for this collection when they want dinner that feels like a treat but doesn't take an hour — a quick fry on a Friday, or a pot of sauce on a cold Tuesday night.
Every recipe here is squid, start to finish: Salt and Pepper Squid, Calamari Puttanesca, Crispy Dry-Dredged Calamari, Stuffed Calamari in Tomato Sauce, Grilled Calamari with dry tzatziki, Oven-fried Squid, and Koonthal Fry.
Cook it fast or slow
Squid turns rubbery in the middle ground. Either sear or fry it in 2 minutes, or simmer it in sauce for 30 to 45 minutes until it goes tender again.
Dry the rings well
Pat the tubes and tentacles with paper towels and let them sit 10 minutes before dredging, or the coating slides off and the oil spits.
Keep oil at 360
Fry in small batches so the oil stays near 360°F. Crowding the pan drops it 40 degrees and you get soggy, pale calamari.
Slice rings evenly
Cut the tubes into rings about 1/2 inch wide so everything finishes at the same time in the pan.
