Let the steaks warm up
Pull filets from the fridge 30 to 40 minutes before cooking and pat them dry. A room-temperature, dry surface browns instead of steaming.
Get the pan screaming hot
Heat cast iron over high heat for 4 to 5 minutes before the steak goes in, then sear 3 to 4 minutes per side without moving it.
Baste with butter
In the last 2 minutes, add a couple tablespoons of butter and tilt the pan, spooning it over the steaks 8 or 10 times.
Rest before you cut
Move the filets to a plate and let them sit 5 to 10 minutes so the juices stay in the meat instead of on the board.
