Slice potatoes thin and even
Cut potatoes about 1/8 inch thick so they cook through in the same time. A mandoline or steady hand keeps scalloped potatoes from having crunchy spots.
Roast asparagus hot and fast
Spread spears in one layer and roast at 425°F for 10 to 12 minutes. Crowding the pan steams them instead of browning them.
Let dough rise twice
Give dinner roll dough about an hour to double, punch it down, shape, then rest 30 to 45 minutes more before baking. The second rise is what makes them soft.
Rest scalloped potatoes
Let the pan sit 10 to 15 minutes out of the oven so the cheese sauce sets up and doesn't run across the plate.
