Cook a simple syrup
Stir equal parts sugar and water over medium heat for 3 to 4 minutes until the sugar dissolves, then chill it before blending so the sorbet isn't grainy.
Use frozen fruit
Frozen raspberries, mango, or strawberries blend into a thick, scoopable texture right away instead of a thin juice you have to freeze for hours.
Add a little lemon juice
A teaspoon or two of lemon juice keeps sweet fruit like watermelon and grapes from tasting flat.
Stir every 30 minutes
If you're freezing in a pan instead of churning, scrape and stir the edges into the middle every 30 minutes for about 3 hours.
