Open in Pepper →A cucumber asks almost nothing of you. Slice it thin, salt it, splash it with vinegar or stir it into sour cream, and you have something cold and crunchy to set beside whatever came off the grill.

Salt the slices first
Toss sliced cucumbers with a teaspoon of salt and let them sit 20 to 30 minutes, then drain. It pulls out water so your dressing doesn't turn soupy.
Slice them paper thin
Use a mandoline or the slicing side of a box grater for 1/8-inch slices. Thin cucumbers soak up vinegar in about 15 minutes instead of an hour.
Chill before serving
Give any cucumber salad at least 1 hour in the refrigerator. Cold makes the crunch sharper and lets the onion mellow out.
Dry bread for sandwiches
Pat cucumber slices between paper towels before layering them on cream cheese. Two minutes of blotting keeps the bread from going soggy by lunch.
