Cut into big chunks
Two-inch pieces of pork shoulder cook evenly in about 8 hours on low and still shred easily. Whole roasts work too, they just need closer to 10.
Keep the fat on
Leave at least a quarter inch of fat cap on the shoulder. It renders down and keeps the meat from drying out during the long cook.
Crisp it under the broiler
Spread shredded pork on a sheet pan, spoon over a little cooking liquid, and broil 5 to 8 minutes until the edges brown.
Add citrus to the pot
A cup of orange juice plus the juice of 2 limes softens the pork and balances the cumin and chili powder.
