Mushroom Gravy Makes Dinner Feel Finished

A pan of mushrooms, a little butter, and something creamy stirred in turns plain chicken or ground beef into a real supper. It's the sauce that makes mashed potatoes worth making.

Cooks on Pepper reach for this collection on the nights they have chicken thighs or a pound of hamburger and twenty minutes, and want something warm and saucy over rice or potatoes.

Every recipe here leans on that gravy — Chicken with Creamy Mushroom Gravy, Creamy Mushroom Chicken Tenders, Salisbury Steak with Mushroom Gravy, Slow Cooker Beef Patties with Mushroom Gravy, Meatballs with Creamy Mushroom Gravy, Pork Tenderloin in Mushroom Gravy, and a plain Mushroom Gravy to spoon over anything.

Quick Tips

  1. 1

    Brown the meat first

Sear chicken, chops, or patties 3 to 4 minutes a side and set them aside. Those browned bits in the pan are what make the gravy taste like something.

  2. 2

    Give mushrooms room

Cook sliced mushrooms in a single layer over medium-high heat for 5 to 7 minutes without stirring much, so they brown instead of steam.

  3. 3

    Cook the flour a minute

Stir 2 tablespoons flour into the butter and mushrooms and let it cook 1 full minute before adding liquid. It keeps the gravy from tasting pasty.

  4. 4

    Add cream off the boil

Turn the heat to low before stirring in cream or sour cream, then simmer gently 2 to 3 minutes so it stays smooth and doesn't break.
