Soften the cream cheese
Let an 8-oz block sit out 30 to 45 minutes before mixing. Cold cream cheese tears the wrappers and leaves lumps in the filling.
Seal with water
Dip a finger in water and run it along two edges of the wrapper, then press firmly. Any gap lets filling leak into the oil.
Fry in small batches
Keep oil around 350°F and fry 5 or 6 at a time for 2 to 3 minutes, turning once, so the temperature doesn't drop.
Spray before air frying
Brush or spray both sides lightly with oil and cook at 375°F for about 8 minutes, flipping halfway, or they'll stay pale and dry.
