Open in Pepper →Cowboy caviar is the dish you make when you need to feed a crowd and you don't want to turn on the oven. Beans, corn, peppers, a sharp dressing — it comes together with a can opener and a cutting board, and it tastes better after it sits.
Cooks on Pepper reach for these when there's a potluck Saturday, a cookout, or a bag of chips and nothing to go with it. It's also the thing they make Sunday and eat out of the fridge all week.
Every recipe here is a real bowl someone brought somewhere: the three-pepper Cowboy Caviar, Southern Cowboy Caviar with avocado and tomato, a black bean and black-eyed pea version with frozen corn, Dill Pickle Cowboy Caviar, a kidney bean take, and Cowboy Caviar Salsa with Roma tomatoes.
Rinse the canned beans
Drain and rinse black beans and black-eyed peas under cold water for 30 seconds so the dressing stays clear instead of cloudy.
Let it sit an hour
Mix everything, cover, and chill at least 1 hour so the peppers and onion soak up the dressing. Overnight is even better.
Add avocado last
Stir diced avocado in within 15 minutes of serving so it holds its shape and doesn't brown in the bowl.
Dice everything the same size
Cut peppers, tomatoes, and onion to about 1/4 inch so every chip gets a little of each.
