Open in Pepper →Chicken tortilla soup is the kind of dinner that stretches. A few chicken breasts, a box of broth, a can of black beans, and you have supper for the whole table with enough left for tomorrow's lunch.
Cooks on Pepper reach for these on the nights nobody is home at the same time. The crock pot ones go in before work and sit warm until everyone has eaten, and the stovetop version comes together while the rice cooks.
Every recipe here is a real weeknight pot: Crock pot Chicken tortilla soup with black beans, Creamy Crockpot Chicken Tortilla Soup with cream of chicken, corn, and Rotel, a Crock-Pot creamy version built on picante salsa, and a stovetop Chicken Tortilla Soup with roma tomatoes and bay leaves.
Shred the chicken in the pot
Pull the breasts out at the end, shred with two forks, and stir them back in for the last 10 minutes so they soak up the broth.
Rinse the canned beans
Drain and rinse black beans for about 30 seconds so the soup stays clear instead of cloudy and thick.
Fry your own strips
Cut 4 corn tortillas into thin strips and fry 1 to 2 minutes in hot oil, or bake at 400°F for 10 minutes until crisp.
Add dairy at the end
Stir in cream of chicken soup, sour cream, or cheese during the last 20 minutes on low so it does not separate.
