Use thighs when you can
Boneless thighs stay tender through an hour of simmering, while breast meat can dry out past about 25 minutes.
Brown the chicken first
Sear the pieces 3 to 4 minutes per side in a hot pot, then build the stew on those browned bits for deeper flavor.
Cut potatoes evenly
Chop potatoes and carrots into 1-inch pieces so they finish at the same time, usually 20 to 25 minutes of simmering.
Thicken at the end
Stir 2 tablespoons flour into a little cold broth, then whisk it in and simmer 5 minutes until the stew coats a spoon.
