Pat the chicken dry
Blot breasts and thighs with paper towels before oiling and seasoning. Dry meat browns instead of steaming, especially for baked bites and crusted breasts.
Cut even cubes
For baked chicken bites, cut the breast into 1-inch pieces so everything finishes at the same time, about 15 to 20 minutes.
Check 165 degrees
Pull chicken when an instant-read thermometer hits 165 degrees in the thickest part. Thighs can go to 175 and stay juicy.
Rest before slicing
Let chicken breasts sit 5 minutes after baking so the juices stay in the meat instead of running out on the cutting board.
