Cook the flour first
Stir the flour into the melted butter and vegetables and let it cook 1 to 2 minutes before adding broth, so the soup doesn't taste pasty.
Add dairy at the end
Stir in cream, milk or half-and-half in the last 5 to 10 minutes over low heat so it doesn't curdle or break.
Shred chicken in the pot
Pull cooked breasts out, shred with two forks, and return them for the last 10 minutes so they soak up the broth.
Bake biscuits separately
Bake biscuits or pie crust strips on a sheet pan at 425°F for about 12 minutes and set them on top at the table so they stay crisp.
