Open in Pepper →Cut chicken into cubes and it cooks in ten minutes instead of thirty, picks up marinade on every side, and comes off the grill with those browned edges everybody fights over. It also makes dinner feel like a little bit of an occasion without a bit of extra work.
Cooks on Pepper reach for these on hot evenings when nobody wants the oven on, when the kids want to help thread the skewers, and when there's a package of chicken tenders in the fridge and forty minutes till supper.
Every recipe here is chicken on a skewer, from Garlic Parmesan Chicken Skewers and Bang Bang Chicken Skewers to Sticky Brown Sugar Chicken Skewers, Grilled Teriyaki Chicken Kabobs, Air Fryer Chicken Souvlaki, and Pineapple Chicken Skewers with Coconut Rice.
Soak wooden skewers first
Cover them in water for at least 30 minutes before threading so they don't scorch on the grill or in the air fryer.
Cut even one-inch cubes
Uniform 1-inch pieces finish cooking at the same time, usually 10 to 12 minutes total with a turn halfway through.
Save some sauce back
Set aside a few tablespoons of the brown sugar or honey garlic sauce before it touches raw chicken, then brush it on at the end.
Don't crowd the skewer
Leave a little gap between pieces so heat gets all the way around; pack them tight and the middles steam instead of browning.
