Pound them thin
Put the breast between two sheets of plastic and pound to about 1/4 inch so the middle cooks through before the crust burns.
Set up three dishes
Flour, beaten egg, then breadcrumbs with grated Parmesan — press the crumbs on firmly and let the cutlets rest 10 minutes so the coating sticks.
Keep the oil steady
Heat about 1/4 inch of oil to 350°F and fry 3 to 4 minutes per side, adding only 2 cutlets at a time so the temperature doesn't drop.
Drain on a rack
Move fried cutlets to a wire rack instead of paper towels so the bottom stays crisp while you finish the rest.
