Open in Pepper →Shredded chicken, a little cheese, a tortilla rolled tight — that's dinner, and it comes out of the oven crunchy enough that nobody asks what else is on the table.
Cooks on Pepper reach for these when there's leftover or rotisserie chicken in the fridge and about 30 minutes before everyone's hungry.
Every recipe here starts with cooked chicken and ends up crisp, from Buffalo chicken taquitos and Cream cheese chicken taquitos to Chicken Flautas with Jalapeno Ranch and Crispy Loaded Chicken Ranch Taquitos.
Warm the tortillas first
Wrap 8 to 10 corn tortillas in a damp towel and microwave 30 seconds so they roll without cracking.
Keep the filling light
Use about 2 tablespoons of chicken and cheese per tortilla — overstuffed rolls split open in the oven.
Seam side down
Place each one seam side down on the pan, about an inch apart, so they seal themselves as they bake.
Brush with oil
Brush or spray the tops with oil before baking at 425°F for 15 to 18 minutes for real crunch.
