Ingredients

  • 140g ground chicken
  • 10g egg whites
  • 15g crushed chips
  • as desired optional: salt + pepper

Instructions

  1. 1in a bowl mix salt and pepper in with the ground chicken using your hands, then form into 7 equal size nuggets
  2. 2dip each nugget into the egg white
  3. 3in a ziploc bag crush chips of your choosing i did BBQ, then dip the chicken that’s coated in egg white into the crushed chips
  4. 4cook in the air fryer at 400F for 7-9 minutes (till the chicken reaches an internal te pariré of 165F)

Ground Chicken Shaped Into Something Better

A pound of ground chicken or a cup of leftover shredded chicken doesn't look like dinner until you bind it, shape it, and put it in a hot skillet. Then it feeds everybody, and the kids eat it without a word.

Every recipe here starts with chicken and ends in a patty or a croquette: low calorie chicken nuggets with crushed chips, carnivore bacon and cheese chicken nuggets, Mediterranean chicken patties with feta, low carb chicken patties with Parmesan, chicken fritters, and two takes on chicken croquettes made with milk and broth.

    Chill the mix first

    Let the shaped patties or croquettes sit in the fridge 20 to 30 minutes so they hold together and don't fall apart in the pan.

    Keep the oil steady

    Fry at about 350°F, or until a crumb sizzles right away, and cook in batches of 4 or 5 so the oil doesn't drop and turn them greasy.

    Chop the chicken fine

    For croquettes, chop cooked chicken into small pieces about the size of a pea so the thick milk-and-broth base holds every bite together.

    Don't crowd the skillet

    Leave an inch between patties and turn them only once, about 3 to 4 minutes a side, so the crust sets before it steams.
