Chill the mix first
Let the shaped patties or croquettes sit in the fridge 20 to 30 minutes so they hold together and don't fall apart in the pan.
Keep the oil steady
Fry at about 350°F, or until a crumb sizzles right away, and cook in batches of 4 or 5 so the oil doesn't drop and turn them greasy.
Chop the chicken fine
For croquettes, chop cooked chicken into small pieces about the size of a pea so the thick milk-and-broth base holds every bite together.
Don't crowd the skillet
Leave an inch between patties and turn them only once, about 3 to 4 minutes a side, so the crust sets before it steams.
