Open in Pepper →Chicken breasts can go dry and boring fast. Bake them under sour cream, cheese, bacon or Caesar dressing and they come out tender, saucy, and something the kids actually finish.
Cooks on Pepper reach for these on the nights when the oven does the work — chicken in a dish at 5:30, dinner on the table by 6:15, with rice or a bagged salad alongside.
Every recipe here is one pan of baked chicken: the Copycat Costco Chicken Bake with bacon and Caesar dressing, Queso Baked Chicken with garlic powder and cumin, Amish Creamy Cheddar Baked Chicken, Million Dollar Baked Chicken Breast with cream cheese, and Caesar Chicken Bake made with tenderloins.
Pound the breasts even
Flatten thick chicken breasts to about 3/4 inch so the thin end doesn't dry out while the middle finishes.
Check at 165 degrees
Pull the chicken when an instant-read thermometer hits 165°F in the thickest part, usually 25 to 30 minutes at 375°F.
Crisp the bacon first
Cook bacon in a skillet 6 to 8 minutes and crumble it in; raw bacon won't render enough under a creamy topping.
Rest before serving
Let the dish sit 5 to 10 minutes out of the oven so the cheese sauce thickens instead of running off the plate.
