Open in Pepper →Cheesecake has a reputation for being fussy, but most of these are just cream cheese, sugar and a crumb crust pressed into a pan. Once you've made one, you'll stop saving it for holidays.
Cooks on Pepper reach for this collection when they need a dessert that feeds a crowd and can be made the day before — church potlucks, birthdays, Sunday dinner, or a Tuesday when everybody's earned something sweet.
Every recipe here is a cheesecake worth the pan space: Churro Cheesecake Bars from crescent rolls, Snickerdoodle Cheesecake Bars, Raspberry White Chocolate Cheesecake on an Oreo crust, No Bake Strawberry Cheesecake Bites, Pumpkin Cheesecake Bars, and a plain Easy Cheesecake with a graham crust.
Start with soft cream cheese
Set the blocks on the counter 1 to 2 hours before you mix. Cold cream cheese leaves lumps no amount of beating will smooth out.
Press the crust firmly
Use the flat bottom of a measuring cup to pack graham or Oreo crumbs into the pan, then chill 15 minutes so the crust holds when you slice.
Don't overbeat the filling
Mix on low just until smooth, about 1 to 2 minutes. Too much air makes the top crack as it cools.
Chill before slicing
Give baked cheesecakes at least 4 hours in the fridge, and no-bake ones 6 hours or overnight, so the centers set clean.
