No-Bake Vegan Cheesecake

Ingredients

  • Crust:
  • 1 packed Cup Pitted Dates
  • 1 cup raw walnuts
  • Filling:
  • 1.4 Cups Raw Cashews (Soaked)
  • juiced 1 lemon
  • 1/3 cup Coconut Oil (melted)
  • 2/3 Cup Coconut Milk (Full fat)
  • 1/3 cup Agave Nectar or Maple Syrup
  • Simple Syrup:
  • 1/2 cup Assorted Fruit of Choice 🍓
  • 2 cups Water
  • 1/3 cup Sugar

Instructions

  1. 1Add Dates to a food processor and blend until small bits form into a ball. Remove & set aside.
  2. 2Add nuts into processor and process into a meal. Then add dates back in and blend until a loose dough forms-it should stick together when you squeeze it in your hands. If it’s too wet, add more walnut meal, if it’s too dry, add more dates.
  3. 3Lightly grease a tin and layer with parchment paper to make removal of the frozen cake easier.
  4. 4Load the mix into a tin and flatten it so it’s compact and it reach the corners of the tin.
  5. 5Take your soaked cashews, juiced lemon, coconut oil, coconut milk and agave nectar into a blender and mix for 1 minute. Keep blending until smooth.
  6. 6Pour the filling into the tin on top of the crust and flatten the top.
  7. 7Load the tin into the freezer and let it freeze for at least 3 hours, but the longer the better!
  8. 8To make the simple syrup, place the assorted fruits in a saucepan with the water and let the water simmer for 15-20 min until the color changes and the water thickens.

    Start with soft cream cheese

    Set the blocks on the counter 1 to 2 hours before you mix. Cold cream cheese leaves lumps no amount of beating will smooth out.

    Press the crust firmly

    Use the flat bottom of a measuring cup to pack graham or Oreo crumbs into the pan, then chill 15 minutes so the crust holds when you slice.

    Don't overbeat the filling

    Mix on low just until smooth, about 1 to 2 minutes. Too much air makes the top crack as it cools.

    Chill before slicing

    Give baked cheesecakes at least 4 hours in the fridge, and no-bake ones 6 hours or overnight, so the centers set clean.
