Ingredients

  • 1/2 3 pound log of cream cheese
  • 2 cups shredded cheddar
  • 1 cup Light beer
  • 1 tsp garlic power
  • 1 tsp Pepper
  • 1/2 tsp Salt

Instructions

  1. 1Cut cream cheese into 1" thick slices. Put in to microwave safe bowl and microwave for 2 minute or until malleable.
  2. 2Add remaining ingredients and mix until well incorporated

A Pot Of Melted Cheese Feeds Everybody

A pot of melted cheese turns a loaf of bread and whatever is in the crisper drawer into dinner, and nobody complains about it. It is one of the few things you can set on the table and walk away from.

    Bagged shreds are coated in starch that can turn grainy. Grate a block by hand for the smoothest melt, about 5 minutes of work.

    Toss cheese with cornstarch

    Coat the shredded cheese with 1 to 2 teaspoons of cornstarch before it goes in the pot to keep the sauce from separating.

    Keep the heat low

    Melt over low heat and stir in the cheese a handful at a time. Boiling makes the cheese seize and go stringy.

    Rub the pot with garlic

    Cut a clove in half and rub the inside of the pot before you start for a light garlic flavor throughout.
