Open in Pepper →There's almost always a half-empty box of cereal in the pantry, and it's good for a lot more than breakfast. Melt a little butter and marshmallow, stir in whatever you've got, and you've got a pan of bars before the kids finish their homework.
Cooks on Pepper reach for this collection when they need a snack in under 20 minutes, a treat to send to a bake sale, or something to do with the last two cups in the bag.
Every recipe here uses cereal as the main event — Yummy cereal bars with oats and butter, Fruity Pebbles Cereal Treats, Cereal O'clock Bars with Cheerios and peanut butter, Butterscotch and Peanut Butter Cereal Nests with corn flakes, plus Honey Almond Cranberry Cereal Granola and Strawberries and Cream Homemade Cereal for the morning.
Melt butter on low
Keep the heat low and stir the butter and marshmallows for 3 to 5 minutes until just smooth. High heat makes the bars hard once they cool.
Grease your hands first
Butter your palms or the back of a spoon before pressing the mixture into the pan. Press just firmly enough to hold together, or the bars turn dense.
Warm the peanut butter
For no-bake bars, heat peanut butter and honey together about 1 minute until pourable. It coats every piece of cereal instead of clumping.
Cool before slicing
Let bars set at room temperature for at least 30 minutes before cutting. Slice with a long knife wiped clean between cuts for neat squares.
