Ingredients

  • 1.5 pounds boneless skinless chicken breast or thighs
  • 1 tablespoon sesame oil
  • 2 tablespoons corn starch
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 4 ounces small broccoli florets
  • 1 red bell pepper, roughly chopped
  • 1/2 sweet yellow onion, roughly chopped
  • 1 cup cashews
  • 1/2 cup hoisin sauce
  • 1/4 cup soy sauce
  • 1 tablespoon sriracha
  • 2 tablespoons brown sugar
  • 1 garlic clove, minced
  • 1 teaspoon ginger, minced
  • to taste green onion, sliced (optional)
  • to taste sesame seeds (optional)

Instructions

  1. 1Preheat oven to 400°F.
  2. 2Cut the chicken into 1-inch bite-sized pieces. Toss with sesame oil, cornstarch, salt, garlic powder, and paprika until evenly coated.
  3. 3Spread the chicken in a single layer on a greased large sheet pan. Add broccoli, red bell pepper, onion, and sprinkle cashews over the top.
  4. 4Bake for 10 minutes.
  5. 5While baking, whisk together hoisin sauce, soy sauce, sriracha, brown sugar, garlic, and ginger to make the sauce.
  6. 6Remove the sheet pan from the oven. Pour the sauce over the chicken and vegetables. Toss to coat evenly.
  7. 7Return to the oven and bake for an additional 4-6 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. 8Garnish with sliced green onions and sesame seeds if desired.
