Open in Pepper →A calzone is pizza you can hold in one hand, and it uses up whatever's in the fridge — leftover chicken, half a jar of sauce, the end of a bag of shredded mozzarella. Seal the edges well and the filling stays put instead of running all over the pan.
Cooks on Pepper reach for these on the nights everybody eats at a different hour, or when the kids want to pick their own fillings and you want dinner done in under an hour.
Every recipe here is a real calzone somebody made for supper: Chicken Alfredo Air Fryer Calzones, a from-scratch dough in the plain Calzones recipe, Pepperoni Calzone with pie dough and pasta sauce, Family Sized Chicken Bacon Ranch Calzone, BBQ Chicken Bacon Calzone, plus low carb and gluten free versions.
Seal the edges tight
Fold the dough over, press with your fingers, then crimp with a fork all the way around so the cheese doesn't leak out during baking.
Cut steam vents on top
Slice 2 or 3 short slits in the top of each calzone before it bakes so steam escapes instead of splitting the seam.
Drain wet fillings first
Pat cooked chicken dry and go light on sauce — about 1/4 cup per calzone — so the bottom crust doesn't turn soggy.
Rest before cutting
Let calzones sit 5 minutes out of the oven or air fryer; the cheese sets up and you won't burn your mouth on the first bite.
