Ingredients

  • 1.5 Pounds Chicken Wings
  • 1/3 Bottle Buffalo Sauce
  • 1 Tbs Butter
  • 1/3 Tbs Salt
  • 1/3 Tbs Garlic Powder
  • 1/3 Tbs Pepper
  • 1/3 Tbs Baking Powder
  • Olive Oil/Spray

Instructions

  1. 1Dry your wings! Take extra care to make sure they’re dry. Throw them in a bowl
  2. 2Mix together salt, pepper, garlic powder and baking powder (this makes them crispy!). I did about a third tablespoon of each but experiment
  3. 3Add just a bit of olive oil, or just spray your wings and coat in the seasoning.
  4. 4Add wings in single layer to air fryer and cook at 375 for 20 minutes, flipping 8 minutes in. I like to test the temp with a few minutes left after the flip to get a gauge. If it’s already at 165, skip to step 5
  5. 5After 22 minutes (or 165 temp), flip one more time, raise the temp to 400, and cook for three more minutes to get them extra crispy
  6. 6I like to mix my Buffalo sauce (franks wing sauce is great, but any brand will do) in a pot with a tablespoon or so of butter for richness, but this is optional.
  7. 7Move wings and Buffalo sauce to bowl and coat, then place on wire rack for a couple minutes so the sauce adheres.
  8. 8Enjoy!

Wings Worth Making On A Weeknight

Wings feel like a treat, but they're really just chicken, salt, and a good hot sauce. Once you get the skin crisp, everybody comes to the kitchen without being called twice.

Cooks on Pepper reach for this collection on game days, birthday parties, and those Friday nights when nobody wants a real dinner but everyone's hungry.

Every recipe here is a wing you can make in your own oven or air fryer: Air Fryer Buffalo Wings with butter stirred into the sauce, Classic Buffalo Wings with garlic powder and salt, Oven Fried Chicken Wings and Buffalo Wing Sauce, and Crispy oven buffalo wings that lean on baking powder for crunch.

Quick Tips

  1. 1

    Dry the wings well

Pat wings dry with paper towels and let them sit uncovered in the fridge 30 minutes to an hour. Wet skin steams instead of crisping.

  2. 2

    Use baking powder for crunch

Toss with about 1 teaspoon baking powder per pound of wings along with the salt. It helps the skin brown and blister in the oven.

  3. 3

    Give them room

Arrange wings in a single layer with space between each one, and cook in 2 batches if your air fryer basket is crowded.

  4. 4

    Sauce at the end

Toss the hot wings in buffalo sauce and melted butter right before serving, about 2 tablespoons butter per bottle of sauce.
