Shred your own cheese
Bagged shreds are coated with starch and can turn grainy. Grate an 8-ounce block yourself and it melts smooth.
Take it off the heat
Add cheese off the burner, a handful at a time, stirring until each one melts. Boiling cheese makes it separate and turn stringy.
Cook the flour a minute
Whisk the flour into the melted butter and let it bubble 1 to 2 minutes before adding liquid, so the soup doesn't taste pasty.
Chop the broccoli small
Cut florets into half-inch pieces so they soften in about 15 minutes and land on the spoon with the cheese.
