Instant Pot Southern Boiled Peanuts

A delicious Southern snack made easy in the Instant Pot, perfect for summer gatherings.

Ingredients

  • 2 pounds green peanuts
  • 1/2 cup salt
  • 1 tbsp Zatarain’s Liquid Crab Boil
  • 1 tbsp crushed red pepper flakes
  • 1 tbsp Cajun seasoning

Instructions

  1. 1Dump the peanuts in a strainer and pluck off any long stems. Rinse thoroughly.
  2. 2Add the peanuts to the Instant Pot, and cover with all other ingredients plus enough water to cover the peanuts.
  3. 3Use a steamer to put on top of the peanuts and gently press down to keep them in place (this step isn’t necessary but we did it).
  4. 4Hit 'Manual' or 'Pressure Cook' High Pressure for 45 minutes and allow a natural release OR for 60 minutes and do a quick release.
  5. 5If using raw peanuts instead of green peanuts, soak them overnight and then cook for 80 minutes and allow a natural release.
  6. 6When done, transport to a large container with a bunch of the liquid it cooked in and refrigerate for a few hours as these taste best cold.
  7. 7Enjoy!

Salty Peanuts Worth The Wait

A bag of boiled peanuts is a roadside stand memory, but you don't need one to have them. Green peanuts, salt, and time in a pot get you the same soft, briny bite you shell into a paper cup.

Quick Tips

    Rinse the peanuts well

    Green peanuts come out of the field with dirt in the shells. Rinse in cool water 2 or 3 times until the water runs clear.

    Keep them under water

    Peanuts float, so set a plate or steamer basket on top to hold them below the water line for even salting.

    Salt at the start

    Add the salt with the water, not at the end, so it works its way through the shell during the whole cook.

    Taste before you drain

    Pull one out at the 4-hour mark in the crockpot and bite it. If it's still firm, give it another hour and check again.
