Rock-hard avocados soften in 1 to 2 days in a paper bag on the counter, faster with a banana tucked in. Move them to the fridge once ripe to buy 2 or 3 more days.
Add avocado off heat
For pasta dishes like the avocado pasta or the chicken and basil version, stir the diced avocado in after you kill the burner so it stays creamy instead of turning gray and mushy.
Squeeze lime on cut pieces
A tablespoon of lime or lemon juice over diced avocado slows browning for a good 30 to 45 minutes, which is plenty for salsa, sandwiches, or a rice bowl.
