Scrape the pan
After searing beef, pour in a cup of broth and scrape up the browned bits with a wooden spoon for about 1 minute — that's most of your flavor.
Cook the onions slow
Give sliced onions 10 to 15 minutes in butter over medium-low heat until soft and golden before the broth goes in.
Salt at the end
Broth, bouillon, and onion soup mix are all salty, so taste after simmering and add salt only in 1/4 teaspoon pinches.
