Pick the right lettuce
Butter or Bibb leaves hold a filling without cracking; romaine hearts work too. Pull 8 to 12 whole leaves and keep them in ice water until you serve.
Brown the meat hard
Spread the ground turkey or beef in a hot skillet and leave it 3 to 4 minutes before stirring so it browns instead of steams.
Cook the sauce down
Let hoisin, soy sauce, and rice vinegar bubble with the meat 2 to 3 minutes so it clings instead of running out the bottom of the leaf.
Add crunch at the end
Stir in water chestnuts, shredded carrots, or coleslaw mix in the last minute so they stay crisp.
