Open in Pepper →Most of these dinners come together in one hot pan, and that's the whole point. You get rice, noodles, or crisp lettuce cups on the table while everybody's still hovering around the kitchen.
Cooks on Pepper reach for this collection on the nights the takeout order feels like too much money and too long a wait, especially when there's chicken thighs or a bag of shrimp already in the fridge.
Every recipe here is a real dinner someone made after work — Ramen Stir Fry, Hibachi Style Fried Rice, Honey Garlic Shrimp Stir Fry, Asian Glazed Chicken Thighs, Asian lettuce wraps, and Asian Glazed salmon.
Use day-old rice
Cold, dry jasmine rice from the day before fries up loose instead of gummy. Spread fresh rice on a sheet pan for 20 minutes in the fridge if that's all you have.
Get the pan hot first
Heat the skillet 2 to 3 minutes before the oil goes in, and cook shrimp or beef in a single layer so it sears instead of steams.
Mix the sauce ahead
Stir hoisin, oyster sauce, and cooking wine together in a cup before you start. Stir fries move fast, and you won't have 30 seconds to measure.
Chill the lettuce cups
Separate the leaves and keep them in ice water for 10 minutes, then pat dry so they stay crisp under the hot filling.
