Cinnamon Apples Folded Into Sweet Dough

An apple fritter is really just chopped apples, brown sugar, and cinnamon tucked into something soft. Whether you fry it or bake it in a loaf pan, the smell fills the kitchen the same way.

Cooks on Pepper reach for these in the fall, when there's a bag of apples on the counter and company coming for coffee, or on a Saturday morning when breakfast should feel like a treat.

Every recipe here works with pantry basics: Apple Fritter Bread with its brown sugar swirl, Mom's Apple Fritters deep-fried in oil, Country Apple Fritter Bread, the Apple Fritter Loaf Cake made with Granny Smiths, and Apple Fritter Waffle Donuts for a quick one.

Quick Tips

  1. 1

    Use firm tart apples

Granny Smith holds its shape and keeps things from going mushy. Dice them about 1/4 inch so they cook through.

  2. 2

    Hold the oil at 350

Fry in oil at 350°F and only 3 or 4 fritters at a time, about 2 minutes per side, so the temperature doesn't drop.

  3. 3

    Swirl the sugar layers

For the breads, spoon half the batter in, add the brown sugar and cinnamon, then repeat and drag a knife through 3 or 4 times.

  4. 4

    Glaze while still warm

Drizzle the powdered sugar glaze after about 15 minutes of cooling so it soaks in a little instead of sliding off.
