Open in Pepper →Apple cider vinegar is one of those pantry staples that quietly does the most. A splash wakes up a salad, softens raw onion, and cuts through a sticky barbecue sauce so the whole plate tastes brighter.
Cooks on Pepper come back to this one when the salad needs a dressing and there's no bottle in the fridge, or when dinner feels flat and needs something sharp to balance it out.
Every recipe here leans on that bottle: Honey Dijon Vinaigrette, Maple Mustard Vinaigrette, a Strawberry vinaigrette, Quick Pickle Garlic Red Onion, Quick Pickled Radish, and Instant Pot Ribs with Garlic-Soy Barbecue Sauce.
Shake dressing in a jar
Add the oil, vinegar, and Dijon to a pint jar and shake 30 seconds. The mustard holds it together far longer than whisking in a bowl.
Warm the pickle brine
Heat the vinegar with salt just until it steams, then pour over sliced onion or radish. They'll taste pickled in about 30 minutes.
Slice onions paper thin
Cut red onion about 1/8 inch thick so the brine soaks all the way through instead of leaving a raw, sharp center.
Add vinegar at the end
Stir the last tablespoon of apple cider vinegar into barbecue sauce after cooking so the sharpness comes through on the ribs.
