Ingredients

  • 1 cup Almond Flour
  • 5 tablespoons Maple Syrup

Instructions

  1. 1Preheat the oven to 350°F (180°C). Line a cookie sheet with parchment paper and lightly oil the paper with coconut oil.
  2. 2In a large mixing bowl, combine almond flour and maple syrup until the dough is wet and sticky.
  3. 3Oil your hands, scoop about 1.5 tablespoons of dough, roll it between your hands, and place them on the cookie sheet. Leave a thumb's width space between each cookie. Repeat until you form 6 balls, oiling your hands as needed.
  4. 4Flatten each dough ball with your hand; thinner for crisper cookies, thicker for a moist center.
  5. 5Bake on the center rack of the oven for 10-12 minutes or until the edges are just turning golden brown.
  6. 6Cool the cookies immediately on a cooling rack for 30 minutes to allow them to firm up.

Soft Almond Cookies With Just A Few Things

Almond flour bakes up soft and a little chewy, and most of these cookies come together in one bowl with a spoon. That matters on a night when you want something sweet but don't want to drag out the mixer.

Cooks on Pepper reach for these when there's company coming and someone at the table skips wheat, or when the after-school snack jar is empty and there's twenty minutes to fix it.

Every recipe here is short on ingredients: Almond Flour Cookies sweetened with maple syrup, Almond Flour Chocolate Chip Cookies, three-ingredient Orange Almond Cookies with no eggs or oil, and Gluten-Free Amaretti made with sugar and egg whites.

Quick Tips

  1. 1

    Chill the dough first

Almond flour dough is soft and spreads fast. Twenty to 30 minutes in the fridge keeps the cookies thick instead of flat.

  2. 2

    Spoon and level the flour

Scooping packs in extra almond flour and dries out the cookie. Spoon it into the cup and sweep the top flat with a knife.

  3. 3

    Bake on parchment

These stick badly to a bare pan. Line the sheet and bake at 350°F until the edges just turn golden, about 10 to 12 minutes.

  4. 4

    Cool before moving them

Almond flour cookies set as they cool. Leave them on the pan a full 10 minutes or they'll crumble when you lift them.
