Work in small batches
An air fryer basket only holds one or two layers of chips. Do 2 or 3 rounds instead of piling them up, or the middle stays cold.
Shred your own cheese
Block Monterey Jack or pepper jack melts smoother than bagged shreds. Grate about 2 cups per batch.
Add cold toppings last
Sour cream, jalapenos, and green onions go on after the nachos come out, or they wilt in the 5 minutes of heat.
Drain the meat well
Blot cooked ground beef, pulled pork, or brisket on paper towels so grease doesn't soak the chips soggy.
