Open in Pepper →A can of chickpeas costs almost nothing and sits in the pantry until you need it. Drain it, dry it, season it, and twelve minutes later you have something crunchy the kids will actually eat.
Cooks on Pepper reach for these when the after-school snacking starts and the chips are already gone, or when they want something to put out with drinks that isn't another bowl of pretzels.
Every recipe here starts with that same can. Air Fried Crispy Italian Herb Chickpeas, plain air fried chickpeas with lemon juice, Ranch Chickpeas, Crispy Air Fryer Chickpea Poppers with paprika, Crispy Baked Chickpeas for when the oven's already on, and Dark Chocolate Roasted Chickpeas for something sweet.
Dry them completely first
Roll the drained chickpeas between two clean kitchen towels for a full minute. Any water left on them steams instead of crisping.
Shake the basket twice
Give the basket a good shake every 4 to 5 minutes so the chickpeas on the bottom don't scorch while the top ones stay soft.
Season after cooking
Ranch powder and Italian seasoning burn at 390°F. Toss with just oil going in, then add the seasoning the second they come out.
Cool before chocolate
For the dark chocolate version, let the chickpeas cool 15 minutes before adding melted chips or the chocolate slides right off.
